3 lbs. diced beef (chuck tender or tri-tip)
2 slices of slab bacon (finely diced)
1 8 oz. can tomato sauce
1 14 oz. can of chicken stock
1 14 oz. can of beef stock
1 large yellow onion (finely minced)
2 tbs. cumin
1 Packet of Best Batch Chili Powder - XX Hot.
Directions: Fry bacon until crisp,
then add meat. On low heat, cook until the meat is brown (about 10 minutes).
Remove the meat from the pot and drain. Add the tomato sauce, the stock,
onions, and the chili powder mix to the pot and stir to blend. Add the meat
back into the pot. Simmer for 1.5 hours, then add cumin. Simmer an additional
20 minutes, until the meat is tender. Serve with diced onions, pickled
Jalapeños and pinto beans on the side.
