The hotness of hot sauces is often rated by the Scoville Scale Scoville scale is a measure of the hotness of a chilli pepper. These fruits of the Capsicum genus contain capsaicin, a chemical compound which stimulates heat-receptor nerve endings in the tongue, and the number of Scoville heat units (SHU) indicates the amount of capsaicin present. Many hot sauces use their Scoville rating in advertising as a selling point. ..... One of the hottest sauces marketed is Blair's 6am rated at 16,000,000 Scoville units. By comparison, Tabasco sauce is rated at 2,500 Scoville units. The effects of consumption of a too-hot hot sauce can be partially remedied by consuming milk or tomato juice or by consuming tomatoes.
